Confession.....This doesn't make me nervous

 This doesn't make me nervous. 

 
I know, that may seem crazy to most people. Maybe it was because...
~ I grew up on a farm
~ I grew up with 2 brothers
~ I grew up with all male cousins to play with
or
~ I was so young when I had my first I never knew any better than to be nervous

Ryan had his first big race a few weeks ago at Arena Cross...I was nervous then! But, it was a different kind of nervous. It was an excited nervousness. I was about to jump out of my skin I was so excited for him!

Confession....I am obsessed with FOOD!!

I admit it. I'm obsessed with food. Always have been, always will be. It started at birth, I believe. I was an overweight baby. My parents proudly say I had 5 fat rolls on each arm! As a toddler I had a brownie in each hand, one in the mouth, and still asking for more. Oh, how I still love my chocolate.

  As a preteen I was extremely thin. But as soon as puberty hit, I skyrocketed!  I discovered food again. I became overweight and chubby in high school.  Once I realized  how chubby I was and n...

Baked Penne

Gather ingredients: chicken broth, penne or ziti pasta, crushed tomatoes, carrots, basil, ground turkey, evoo, garlic, onion(not pictured)

 

Peel, slice, and chop carrots


Chop carrots, finely


Drizzle evoo in a skillet and add carrots, onion( oops! I forgot to add to the first picture!), and garlic. Sautee for a few minutes then add the ground turkey.


Finely chop fresh basil leaves. They are so much more fragrant and flavorful than dried!


Cook until meat is browned and veggies are soft

Mango Chicken Salad Wraps

Mango Chicken Salad Wraps:

Chop (soft)mango and sweet red bell pepper. Gather alfalfa sprouts and spinach leaves.


Bake chicken with Jerk Chicken Seasoning. I didn't have that so I used Penzey's Northwoods seasoning.


When chicken is done chop and add to bowl with other ingredients


Mix about a cup of PLAIN yogurt, lime juice and lime zest.


Add to the chicken mixture and stir


 
I like to use the Multi-Grain with Flax wraps. Super healthy and yummy.
