Raw Cinnamon Chocolate Cake

Raw Cinnamon Chocolate Cake

Ingredients-

cake-

1 c chopped dates/ 1 8 oz bag

1 c chopped pecan pieces

1 tbsp pure vanilla

3 tbsp cocoa powder

frosting-

1 c chopped dates/ 8 oz bag

2 tbsp melted coconut oil
1 tsp each of cinnamon and nutmeg

1 tsp pure vanilla

1 c water

1. In a blender, blend cake ingredients. Press into a spring form pan. Press the edges up a little to make a little bowl inside. Put in fridge for a few hours, or even overnight.

Talapia Tacos & Shrimp Tacos

Talapia Tacos with Sriracha Sauce


5 filets of Talapia
Shredded iceberg lettuce
avocado
onion, sliced
1/2 C mayonnaise
1 tbsp sugar
1 tbsp Sriracha sauce
1 tbsp cumin
1 tbsp garlic powder
1 tbsp chili powder
evoo
flour tortillas, taco size
salsa

1. Mix mayo, sugar, sriracha; set aside.
2. Mix spices together.
3. Drizzle talapia filets with evoo. Rub with spices on each side.
4. Sautee onion slices in evoo until tender.
4. Grill or sear filets in a pan. A few minutes on each side, until flakes with floor.

Homemade Donuts

Homemade Donuts:
a few cans of biscuits(I used regular, not jumbo)
vegetable oil
powdered sugar
milk
chocolate, melted

1. Heat oil on medium.
2. Using a small circle cookie cutter(or bottle top) , cut a center out of the biscuit.
3. Gentle lay in oil. Wait to brown, then flip with a fork or long utensil.
4. When browned on both sides remove from oil and lay on kitchen towel to drain grease.
5. Once it's cool, dip in desired topping

Mini hearts for little fingers

I usually make these panckaes for Valentine breakfast. This year we had a special breakfast at school so I made these the night before.

I made a huge batch of panckaes. I made half of the batter. Then I put red food coloring in the last half of the batter. I used different cookie cutters to make the chapes. And I swapped out the colors and made several designs.

Cashew Chicken

Cashew Chicken( feeds large family)
~ chicken, cut up in bite size pieces, breaded and fried/or cheat-popcorn chicken, frozen
~ brown rice
~ green onion, sliced
~ cashews
sauce:
~ oyster sauce
~ soy sauce
~ 32 oz box chicken broth, natural-reduced sodium
~ 3 heaping tablespoons cornstarch, mixed with in a cup of water

Strawberry Lemonade Cupcakes

1 1/2 C strawberries, chopped small
1 1/2 C sucanat (or white sugar)
6 TBSP milk
3/4 C vegetable oil
3 tsp pure vanilla
6 egg whites, room temp!
2 1/4 C flour~ I use bread flour
1 1/2 tsp baking powder
Frosting:
6 oz cream cheese, room temp ONLY!

3 TBSP honey
3 packets stevia(or sugar)

Baked Chocolate Chip French Toast

 Baked Chocolate Chip French Toast

1 loaf bread( I use my homemade Amish Bread)
8 eggs
cinnamon
chocolate chips

1. Layer the bottom of a greased 13x9 pan with bread.
2. Beat eggs and cinnamon together; and pour half of the mixture on top.
3. Add another layer of bread.
4. Pour the rest of the eggs on top. Spread with the back of a spoon to cover all breads with egg mixture.
5. Cover with foil and refrigerate overnight. Or bake immediately.

MOMS SCHEDULE:Summer schedule*


*The schedule is basically the same for school days, but morning routines are an hour earlier and earlier dinner and bedtime*

6:00 - wake, contacts, shower, dress

6:20- bible reading, devotional, coffee/tea

7:00/8- make breakfast~ Read Psalm and a Proverbs while kids eat

7:30- treadmill (right now I'm doing Couch to 5k iPhone app)

8:00- Table chores/Prep for dinner/ crock...

Southwestern Couscous Salad

 1 box of couscous, cooked as directed
1/4 C fresh cilantro, chopped
1 red bell pepper, chopped
1 tomato, chopped
1 can black beans, drained and rinsed
1 can whole kernel corn, drained 
1 zucchini, peeled and chopped
a few dashed of ancho chili(or regular chili powder) powder

1. Make couscous as directed on box.
2. Chopped all veggies.
3. Put all veggie ingredients in a bowl.
4. When Couscous is done, fluff with a fork. Then add to bowl of veggies.
5. Mix and serve!

Ice Cream Cone Cupcakes

 Ice cream cone cupcakes
 ~ ice cream cones
~ cake mix

1. Make cake mix as directed
2. Pour 1/4 cup into each cone. Make sure it does not cover the inside rim of the cones.
3. Put cones into a muffin pan.
4. Bake 15 minutes or until middle of cake is done.
5. Ice with any icing/frosting you desire!
 
 In Pictures:

Pour cake batter into cones. Set in a muffin pan. bake 15 minutes.


This is how cute it looks when it's done!


I cheated and used this to make icing the cupcakes quick, easy and still cute.

Coconut Shrimp

Coconut Shrimp~ Clean Version:
~ Jumbo Shrimp
~ flaked coconut
~ 1 egg white
~ few tablespoons toasted sesame oil
~ bamboo skewers

1. Preheat oven to 450 degrees/ Take tails off of shrimp.
2. Thread shrimp on skewers. Make sure you thread the fat part and skinny tail so it won't spin when you turn it.
3. Mix egg white and sesame oil. Brush on each side of skewered shrimp.
4. Spread coconut in a 13x9 pan. Lay skewer on coconut and press to make sure it stays on each side.

Salmon with Sweet & Tangy Pineapple Chutney

Salmon:
1.Salt and pepper salmon and cook in a skillet with evoo. Flip, cooking for about 6 minutes total

Chutney:
orange
pineapple tidbits with juice
1 red pepper, diced
1/4 red onion, diced
1 jalapeno, seeded, minced
1/2 tbsp roasted garlic
1 tsp ginger
1 TBSP apple cider vinegar
salt, pepper
1 tsp arrowroot

1. Zest orange into saucepan.
2. Peel orange and cut in between membranes, chop orange segments.

3. Add all the ingredients except for arrowroot.

Pork Chops with Gingered-Orange Dipping Sauce

Pork Chops with Gingered-Orange Dipping Sauce:

~ thin strips of pork chops

~ soy sauce

~ evoo

~ jerk seasoning

~ garlic

1. Add all ingredients in a large ziploc bag. Marinade for 4 hours or overnight.

2. Thread strips on a bamboo skewer. Grill 10 minutes. Or Broil 8 minutes in oven.

Dipping Sauce:(for  crowd)

~  1/3 or 1/2 stick melted butter

~ 1 tbsp ginger

~ 1 tbsp garlic

~  1 whole lime of lime juice or 1/2 plastic container of lime juice

Carrot Soup

Gather ingredients: carrots, onion, sweet potato, garlic, coconut butter, chicken stock, orange juice


Heat 1/2 cup coconut butter in large stock pot.


Peel and chop 1 bag of carrots and 1 sweet potato. Add onion to pot and sautee then add carrots and sweet potato. Stir and heat until starting to get tender.


Add 2 boxes of chicken stock and  1 Cup orange juice, and 1 tsp ginger


Heat to boiling. Reduce and simmer for 1 hour.

Asian Salmon Sandwiches

Gather ingredients: lime juice, canned salmon, ginger, soy sauce, chopped celery.


Mix salmon, celery, 1 tsp ginger, 2 TBSP soy sauce.


It should look like a salmon salad


Scoop onto a whole grain bun with lettuce and serve with Asian noodles.
* Asian Noodles~ heat peanut butter and soy sauce in small pot. Cook sobo or undon noodles as directed and mix*

Caribbean Chicken

Gather: chicken breast, lime, orange, garlic, ginger, nutmeg, cinnamon, mace, hot sauce, agave nectar, molasses, coconut butter, salt and pepper

 


Marinade chicken for a four hours or overnight in: juice and zest from lime and orange, 1 tsp agave nectar, 1 tsp molasses, nutmeg, ginger, garlic, cinnamon, mace, and hot sauce.(Save the marinade!)


Heat 2 TBSP coconut butter.


Add chicken and brown slowly on each side.


Pour reserved marinade over chicken. Cover and cook for 30 minutes, or grill.

Moroccan Chicken and Lentils

Gather: lentils evoo, red wine vinegar, cumin, chili powder, onion, garlic, cinnamon, cilantro, chicken breast


Cook lentils and directed on package. Mix 1/4 evoo, 1/4 red wine vinegar, 2 TBSP cumin, garlic, and chili powder, 1tspn salt. Pour over lentil and set to the side.

 

(I did not do this but I suggest this~ Heat evoo in a large skillet. Add onions and sautee until tender and brown)
Add chicken, salt, 1 tsp cumin, 2tsp chili powder, 1/4 cinnamon. Sautee until chicken has cooked through.

Sweet Potato Beef Stew

Gather 2 sweet potato, onion, large can of crushed or pureed tomatoes, lean stew meat, chili powder, cumin, salt, pepper.

 

Peel and chop sweet potato and onion.


Brown meat in evoo in large pot, Then remove.


Heat onion and garlic until tender. Then add chili powder and cumin.


Add sweet potatoes, meat, and tomatoes.Simmer for 1 hour. Sweet potatoes should be tender.



Serve with flax crackers or Ezechiel bread.

Mexican Rice and Beans

Gather ingredients: evoo, cumin, coriander, cinnamon, chili powder, onion, garlic, cooked BROWN rice, pinto beans(cooked), chicken broth, tomato paste, salt, pepper(opt)
 

 

Heat cumin, coriander, chili powder, and cinnamon in dutch oven or large pot until fragrant. Add chopped onion and garlic and heat a little more.


Add rice, beans, stock, tomato paste, salty, and peppers.

Reduce heat and simmer for 30 minutes.


Serve Hot! with a salad and Ezechiel bread. Enjoy!

Baked Penne

Gather ingredients: chicken broth, penne or ziti pasta, crushed tomatoes, carrots, basil, ground turkey, evoo, garlic, onion(not pictured)

 

Peel, slice, and chop carrots


Chop carrots, finely


Drizzle evoo in a skillet and add carrots, onion( oops! I forgot to add to the first picture!), and garlic. Sautee for a few minutes then add the ground turkey.


Finely chop fresh basil leaves. They are so much more fragrant and flavorful than dried!


Cook until meat is browned and veggies are soft

Mango Chicken Salad Wraps

Mango Chicken Salad Wraps:

Chop (soft)mango and sweet red bell pepper. Gather alfalfa sprouts and spinach leaves.


Bake chicken with Jerk Chicken Seasoning. I didn't have that so I used Penzey's Northwoods seasoning.


When chicken is done chop and add to bowl with other ingredients


Mix about a cup of PLAIN yogurt, lime juice and lime zest.


Add to the chicken mixture and stir


 
I like to use the Multi-Grain with Flax wraps. Super healthy and yummy.

1C Almonds
1 1/4 C unbleached whole wheat flour
1 C unbleached all purpose flour
1 tsp baking powder

1/4 C agave nectar
1/3 C coconut butter

BBQ Turkey Nachos!

This is what we do with our leftover turkey from Thanksgiving. The recipe is originally my BBQ Nachos from a smoked pork butt. Ewww. That sounded awful!

Steamed Carrots~ Baby Food
1 bag fresh baby or petite carrots
1 1/2 cup water
electric steamer/microwave steamer/stovetop steamer
 
1. Steam carrots until tender
2. Put into blender or food processor and puree until smooth. Add water if needed
3. Pour into ice cube trays or tiny plastic ziploc bowls.
4. Wrap trays and freeze until use.


I steamed my carrots in my microwave steamer because my electric steamer broke. I feel like the microwave takes nutrients out of the food, so I try not to do that often...

1 stick of  unsalted butter
1 packet Maple and Brown Sugar instant oats

Mushroom Burgers(large batch):
1-2 lbs ground beef
dales seasoning
garlic powder
2 can mushroom soup( healthy kind, reduced sodium and fat )
milk

1. Heat oven to 400 degrees, grease 13x9 pan.
2. Mix beef, dales seasoning, and garlic powder. Form into patties and put in 13x9 pan.

3. In a medium bowl- pour mushroom soup. Add 1/2 - 1 can of milk. Mix.
4. Pour over  beef patties.
5. Bake for 35-45 minutes until patties are no longer pink.

My Mom's Goulash

*Big batch*
1 lb ground beef
1 bag of large elbow noodles
2 cans tomato soup (or 1 large)
water

1. Boil noodles and drain.
2. Brown beef and drain.
3. Add tomato soup. Rinse can with a little water to get the rest of soup out.
4. Add all ingredients together. (You can add salt and pepper or any seasoning you would like. I just add pepper)
5. Simmer until warm.

Pasta Salad

1 box pasta~ bow tie or elbow
2 bell peppers, diced(I use red, green, and yellow for color)
1 onion, purple or regular, diced small
1 C mayo
1/4 C EVOO(extra virgin olive oil)
a few dashes of pepper
a few dashes of salt

1. Boil noodles, drain, rinse with cold water to cool.
2. Mix mayo, oil, salt, & pepper in a bowl.
3. Mix pasta and mayo mix together.(It may look creamy, but that's okay)
4. Add more salt and pepper to taste. Cover.
5. Let it sit in the refrigerator overnight to let the flavors blend.

The sweet fried okra recipe was made on accident. A few years ago we took all the ingredients to my mother-in-laws to make fried okra....cut okra, flour, and cornmeal...or what I THOUGHT was cornmeal. As soon as we started trying it, we realized it tasted "sweet".

You see, I am going blind in my left eye, and my vision in my other eye isn't so great either. I thought I grabbed the cornmeal but instead, I grabbed the POWDERED SUGAR!!! That's right! It tasted almost like funnel cake!

Easiest Shepherds Pie

My son Seth LOVES shepherds pie. He would eat it everyday. Seriously! There are many ways that I make it.
1. leftover roast, leftover veggies, leftover mashed potatoes, & brown gravy
2. ground beef with veggies from the garden.
3. ground turkey with frozen mixed veggies

Shepherds Pie:
~ 1 lb ground turkey
~ 2 large cans Veg-All, original style

Grilled Pineapple and Shrimp

Grilled Pineapple and Shrimp
1 lb shrimp, peel and devein
fresh pineapple , cut into chunks
6 TBSP orange marmalade
1 TBSP soy sauce
Rice
1/2 c cilantro, chopped

1. Thread shrimp and pineapple on skewers

2. In small saucepan, combine 4 TBSP orange marmalade, 1/2 water, and soy sauce
3. Simmer for a few minutes, then brush on top of shrimp and pineapple
4. Grill 8-10 minutes, turning once
5. Bring sauce to a full boil.

Pina` Colada Pie

 Pina` Colada Pie:
1 can crushed pineapple, drained
1/2 bag of flaked coconut
1 large tub cool whip

1. Combine all ingredients and pour into two pie crusts
2. Freeze, for a few hours or overnight.
3. Let it sit out a few minutes before cutting and serving

My Very Simple Lasagna

Lasagna:
1 lb ground beef or chuck
1 lb sausage
2 cans/jars spaghetti sauce
1 small carton cottage cheese
parmesan cheese
2-4 C mozzarella cheese
2 eggs
lasagna noodles, cooked
basil & italian seasoning

1. Brown beef and sausage. Add spaghetti sauces and simmer.
2. In medium bowl, mix cheeses, eggs, few dashes of basil and italian seasoning.

Resurrection Cookies:
 
To be made the evening before Easter.
1c. whole pecans
1 tsp. vinegar

Salmon filets
brown sugar
lime juice
shredded coconut
1. Grease baking pan with cooking spray and heat oven to 375 degrees
2. Spread salmon filets on sheet.
3. Pour lime juice on salmon

3/4 C flour
3 TBSP cocoa
1 TBSP baking powder
1/2 tsp salt

French Onion Round Steak

package of round steaks(I actually made 2 huge packages, layered)
1/2 C (plus more)Lea & Perrins worcesterhire
butter
onion, sliced
1 Tbsp garlic
french onion soup mix 
2C water

1. Heat oven 375 or start crockpot. Grease 13x9 pan or crockpot with cooking spray.

Baked Potato Soup

Baked Potato Soup
4-6 large potatoes, peeled and cubed
6-8 C chicken broth (canned or leftover from boiling chicken)
1-2 C milk
salt and pepper
Opt- bacon, cheese, sour cream, chives, crackers, cornbread

1. Boil potatoes in broth until tender.
2. Mash with potato masher. Do not mash completely! Leave a few good chunks of potato.
3. Add milk, salt, pepper. Stir together.

Chocolate Chip Pumpkin Cookies

This has to be the easiest cookie recipe ever. And it doesn't really call for chocolate chips, but everything is better with chocolate.

Easiest Pumpkin Bread/Muffins/Cookies Ever!

1 box spice cake mix

1. Mix ingredients together. Thats it!
2. Bake 375 degrees for 30 minutes(for a loaf- or when a knife poke comes out clean)/ 10-14 minutes for muffins or cookies.

I purchased a large bag (5 gallon bucket size) of sweet potatoes from a local farmer. Now, what to do with all of those potatoes!! The usual ~baked topped with butter, cinnamon and sugar, sweet potato casserole, and mashed sweet potatoes (seasoned with butter, cinnamon and sugar).

~1 soup bone (found at a butcher or use 4 beef bouillion cubes)
~2 cans diced tomatoes(you can use whole or fresh,diced)
~1 bunch of celery, all of it chopped, remove the end- keep the leaves.
~Pickling Spice
~water
~1 tsp salt 
~Dumplings, egg noodles, or rice
1. In a very large stock pot, fill with water and soup bone. Simmer 1 hour.

Homemade Bread Crumbs

1. Lay out bread that is stale or will be stale before it molds.
2. Lay on cookie sheets and bake in oven/ 350 degrees, 5-10 mins, until toasty.
3. Put in food processor or blender, blend until they are very tiny crumbs.
4. Put in tupperware container. You can add spices if you like seasoned bread crumbs. i always put Italian seasoning in    mine.
5. Put container in freezer to keep.

I want to share two summer time treats before summer ends. These recipes are the ones I remember when I was young. It may bring you back to the fun days of summer of your childhood!

Fudge Popsicles
3 Tbsp Flour
3 Tbsp cocoa
4 c Milk
popsicle mold

1. In a sauce pan, combine sugar, flour, and cocoa.
2. Stir in milk slowly, until smooth.

Mix:
 1/4c butter, softened
3/4c sugar
2 eggs
1/2 c milk
1 tsp vanilla
Mix:
2 C flour
1 tsp baking powder
~ Then add to batter.
~ Fold in in 2 C berries/ Blueberries, blackberries, raspberries, strawberries
~ Pour batter into grease or foil lined loaf pan, or Muffin tin
Topping:
1/3 c sugar 
 1/2 c flour

1 1/2 tsp cinnamon
1/4 c butter, room temp
~Sprinkle over loaf or muffins
~Bake at 350 degrees for 20 mins.( check with knife) 
~ Cool 10 minutes before serving

Raw Cinnamon Chocolate Cake

Ingredients-

cake-

1 c chopped dates/ 1 8 oz bag

1 c chopped pecan pieces

1 tbsp pure vanilla

3 tbsp cocoa powder

frosting-

1 c chopped dates/ 8 oz bag

2 tbsp melted coconut oil
1 tsp each of cinnamon and nutmeg

1 tsp pure vanilla

1 c water

Talapia Tacos with Sriracha Sauce


5 filets of Talapia
Shredded iceberg lettuce
avocado
onion, sliced
1/2 C mayonnaise
1 tbsp sugar
1 tbsp Sriracha sauce
1 tbsp cumin
1 tbsp garlic powder
1 tbsp chili powder
evoo
flour tortillas, taco size
salsa

1. Mix mayo, sugar, sriracha; set aside.
2. Mix spices together.
3. Drizzle talapia filets with evoo. Rub with spices on each side.

Homemade Donuts

Homemade Donuts:
a few cans of biscuits(I used regular, not jumbo)
vegetable oil
powdered sugar
milk
chocolate, melted

1. Heat oil on medium.
2. Using a small circle cookie cutter(or bottle top) , cut a center out of the biscuit.
3. Gentle lay in oil. Wait to brown, then flip with a fork or long utensil.
4. When browned on both sides remove from oil and lay on kitchen towel to drain grease.

Mini hearts for little fingers

I usually make these panckaes for Valentine breakfast. This year we had a special breakfast at school so I made these the night before.

I made a huge batch of panckaes. I made half of the batter. Then I put red food coloring in the last half of the batter. I used different cookie cutters to make the chapes. And I swapped out the colors and made several designs.

Cashew Chicken( feeds large family)

1 1/2 C strawberries, chopped small
1 1/2 C sucanat (or white sugar)
6 TBSP milk
3/4 C vegetable oil

 Baked Chocolate Chip French Toast

1 loaf bread( I use my homemade Amish Bread)
8 eggs
cinnamon
chocolate chips

1. Layer the bottom of a greased 13x9 pan with bread.
2. Beat eggs and cinnamon together; and pour half of the mixture on top.
3. Add another layer of bread.
4. Pour the rest of the eggs on top. Spread with the back of a spoon to cover all breads with egg mixture.

*The schedule is basically the same for school days, but morning routines are an hour earlier and earlier dinner and bedtime*

6:20- bible reading, devotional, coffee/tea

7:00/8- make breakfast~ Read Psalm and a Proverbs while kids eat

7:30- treadmill (right now I'm doing Couch to 5k iPhone app)

8:00- Table chores/Prep for dinner/ crock...

Southwestern Couscous Salad

 1 box of couscous, cooked as directed
1/4 C fresh cilantro, chopped
1 red bell pepper, chopped
1 tomato, chopped
1 can black beans, drained and rinsed
1 can whole kernel corn, drained 
1 zucchini, peeled and chopped
a few dashed of ancho chili(or regular chili powder) powder

1. Make couscous as directed on box.
2. Chopped all veggies.
3. Put all veggie ingredients in a bowl.
4. When Couscous is done, fluff with a fork. Then add to bowl of veggies.
5. Mix and serve!

Ice Cream Cone Cupcakes

 Ice cream cone cupcakes
 ~ ice cream cones
~ cake mix

1. Make cake mix as directed
2. Pour 1/4 cup into each cone. Make sure it does not cover the inside rim of the cones.
3. Put cones into a muffin pan.
4. Bake 15 minutes or until middle of cake is done.
5. Ice with any icing/frosting you desire!

Pour cake batter into cones. Set in a muffin pan. bake 15 minutes.

I cheated and used this to make icing the cupcakes quick, easy and still cute.

Coconut Shrimp

Coconut Shrimp~ Clean Version:
~ Jumbo Shrimp
~ flaked coconut
~ 1 egg white
~ few tablespoons toasted sesame oil
~ bamboo skewers

1. Preheat oven to 450 degrees/ Take tails off of shrimp.
2. Thread shrimp on skewers. Make sure you thread the fat part and skinny tail so it won't spin when you turn it.
3. Mix egg white and sesame oil. Brush on each side of skewered shrimp.
4. Spread coconut in a 13x9 pan. Lay skewer on coconut and press to make sure it stays on each side.

Salmon:
1.Salt and pepper salmon and cook in a skillet with evoo. Flip, cooking for about 6 minutes total

Chutney:
orange
pineapple tidbits with juice
1 red pepper, diced
1/4 red onion, diced
1 jalapeno, seeded, minced
1/2 tbsp roasted garlic
1 tsp ginger
1 TBSP apple cider vinegar
salt, pepper
1 tsp arrowroot

1. Zest orange into saucepan.
2. Peel orange and cut in between membranes, chop orange segments.

Pork Chops with Gingered-Orange Dipping Sauce:

~ thin strips of pork chops

~ soy sauce

~ evoo

~ jerk seasoning

~ garlic

1. Add all ingredients in a large ziploc bag. Marinade for 4 hours or overnight.

2. Thread strips on a bamboo skewer. Grill 10 minutes. Or Broil 8 minutes in oven.

Dipping Sauce:(for  crowd)

~  1/3 or 1/2 stick melted butter

Carrot Soup

Gather ingredients: carrots, onion, sweet potato, garlic, coconut butter, chicken stock, orange juice


Heat 1/2 cup coconut butter in large stock pot.


Peel and chop 1 bag of carrots and 1 sweet potato. Add onion to pot and sautee then add carrots and sweet potato. Stir and heat until starting to get tender.


Add 2 boxes of chicken stock and  1 Cup orange juice, and 1 tsp ginger


Heat to boiling. Reduce and simmer for 1 hour.

Asian Salmon Sandwiches

Gather ingredients: lime juice, canned salmon, ginger, soy sauce, chopped celery.


Mix salmon, celery, 1 tsp ginger, 2 TBSP soy sauce.

Scoop onto a whole grain bun with lettuce and serve with Asian noodles.

Caribbean Chicken

Gather: chicken breast, lime, orange, garlic, ginger, nutmeg, cinnamon, mace, hot sauce, agave nectar, molasses, coconut butter, salt and pepper

 


Marinade chicken for a four hours or overnight in: juice and zest from lime and orange, 1 tsp agave nectar, 1 tsp molasses, nutmeg, ginger, garlic, cinnamon, mace, and hot sauce.(Save the marinade!)


Heat 2 TBSP coconut butter.


Add chicken and brown slowly on each side.


Pour reserved marinade over chicken. Cover and cook for 30 minutes, or grill.

Moroccan Chicken and Lentils

Gather: lentils evoo, red wine vinegar, cumin, chili powder, onion, garlic, cinnamon, cilantro, chicken breast


Cook lentils and directed on package. Mix 1/4 evoo, 1/4 red wine vinegar, 2 TBSP cumin, garlic, and chili powder, 1tspn salt. Pour over lentil and set to the side.

 

(I did not do this but I suggest this~ Heat evoo in a large skillet. Add onions and sautee until tender and brown)
Add chicken, salt, 1 tsp cumin, 2tsp chili powder, 1/4 cinnamon. Sautee until chicken has cooked through.

Sweet Potato Beef Stew

Gather 2 sweet potato, onion, large can of crushed or pureed tomatoes, lean stew meat, chili powder, cumin, salt, pepper.

 

Peel and chop sweet potato and onion.


Brown meat in evoo in large pot, Then remove.


Heat onion and garlic until tender. Then add chili powder and cumin.


Add sweet potatoes, meat, and tomatoes.Simmer for 1 hour. Sweet potatoes should be tender.



Serve with flax crackers or Ezechiel bread.

Mexican Rice and Beans

Gather ingredients: evoo, cumin, coriander, cinnamon, chili powder, onion, garlic, cooked BROWN rice, pinto beans(cooked), chicken broth, tomato paste, salt, pepper(opt)
 

 

Heat cumin, coriander, chili powder, and cinnamon in dutch oven or large pot until fragrant. Add chopped onion and garlic and heat a little more.


Add rice, beans, stock, tomato paste, salty, and peppers.

Reduce heat and simmer for 30 minutes.


Serve Hot! with a salad and Ezechiel bread. Enjoy!

Baked Penne

Gather ingredients: chicken broth, penne or ziti pasta, crushed tomatoes, carrots, basil, ground turkey, evoo, garlic, onion(not pictured)

 

Peel, slice, and chop carrots


Chop carrots, finely


Drizzle evoo in a skillet and add carrots, onion( oops! I forgot to add to the first picture!), and garlic. Sautee for a few minutes then add the ground turkey.


Finely chop fresh basil leaves. They are so much more fragrant and flavorful than dried!


Cook until meat is browned and veggies are soft

Mango Chicken Salad Wraps

Mango Chicken Salad Wraps:

Chop (soft)mango and sweet red bell pepper. Gather alfalfa sprouts and spinach leaves.


Bake chicken with Jerk Chicken Seasoning. I didn't have that so I used Penzey's Northwoods seasoning.


When chicken is done chop and add to bowl with other ingredients


Mix about a cup of PLAIN yogurt, lime juice and lime zest.


Add to the chicken mixture and stir


 
I like to use the Multi-Grain with Flax wraps. Super healthy and yummy.

BBQ Turkey Nachos!

Steamed Carrots~ Baby Food
1 bag fresh baby or petite carrots
1 1/2 cup water
electric steamer/microwave steamer/stovetop steamer
 
1. Steam carrots until tender
2. Put into blender or food processor and puree until smooth. Add water if needed
3. Pour into ice cube trays or tiny plastic ziploc bowls.
4. Wrap trays and freeze until use.


I steamed my carrots in my microwave steamer because my electric steamer broke. I feel like the microwave takes nutrients out of the food, so I try not to do that often...

Mushroom Burgers(large batch):
1-2 lbs ground beef
dales seasoning
garlic powder
2 can mushroom soup( healthy kind, reduced sodium and fat )
milk

1. Heat oven to 400 degrees, grease 13x9 pan.
2. Mix beef, dales seasoning, and garlic powder. Form into patties and put in 13x9 pan.

3. In a medium bowl- pour mushroom soup. Add 1/2 - 1 can of milk. Mix.
4. Pour over  beef patties.

My Mom's Goulash

1 lb ground beef
1 bag of large elbow noodles
2 cans tomato soup (or 1 large)
water

1. Boil noodles and drain.
2. Brown beef and drain.
3. Add tomato soup. Rinse can with a little water to get the rest of soup out.
4. Add all ingredients together. (You can add salt and pepper or any seasoning you would like. I just add pepper)
5. Simmer until warm.

1 box pasta~ bow tie or elbow
2 bell peppers, diced(I use red, green, and yellow for color)
1 onion, purple or regular, diced small
1 C mayo
1/4 C EVOO(extra virgin olive oil)
a few dashes of pepper
a few dashes of salt

1. Boil noodles, drain, rinse with cold water to cool.
2. Mix mayo, oil, salt, & pepper in a bowl.
3. Mix pasta and mayo mix together.(It may look creamy, but that's okay)
4. Add more salt and pepper to taste. Cover.
5. Let it sit in the refrigerator overnight to let the flavors blend.

Fried Okra & Sweet Fried Okra/Green Tomatoes

The sweet fried okra recipe was made on accident. A few years ago we took all the ingredients to my mother-in-laws to make fried okra....cut okra, flour, and cornmeal...or what I THOUGHT was cornmeal. As soon as we started trying it, we realized it tasted "sweet".

You see, I am going blind in my left eye, and my vision in my other eye isn't so great either. I thought I grabbed the cornmeal but instead, I grabbed the POWDERED SUGAR!!! That's right! It tasted almost like funnel cake!

Easiest Shepherds Pie

My son Seth LOVES shepherds pie. He would eat it everyday. Seriously! There are many ways that I make it.
1. leftover roast, leftover veggies, leftover mashed potatoes, & brown gravy
2. ground beef with veggies from the garden.

Grilled Pineapple and Shrimp

Grilled Pineapple and Shrimp
1 lb shrimp, peel and devein
fresh pineapple , cut into chunks
6 TBSP orange marmalade
1 TBSP soy sauce
Rice
1/2 c cilantro, chopped

1. Thread shrimp and pineapple on skewers

2. In small saucepan, combine 4 TBSP orange marmalade, 1/2 water, and soy sauce
3. Simmer for a few minutes, then brush on top of shrimp and pineapple
4. Grill 8-10 minutes, turning once
5. Bring sauce to a full boil.

Pina` Colada Pie

 Pina` Colada Pie:
1 can crushed pineapple, drained
1/2 bag of flaked coconut
1 large tub cool whip

1. Combine all ingredients and pour into two pie crusts
2. Freeze, for a few hours or overnight.
3. Let it sit out a few minutes before cutting and serving

My Very Simple Lasagna

Lasagna:
1 lb ground beef or chuck
1 lb sausage
2 cans/jars spaghetti sauce
1 small carton cottage cheese
parmesan cheese
2-4 C mozzarella cheese
2 eggs
lasagna noodles, cooked
basil & italian seasoning

1. Brown beef and sausage. Add spaghetti sauces and simmer.
2. In medium bowl, mix cheeses, eggs, few dashes of basil and italian seasoning.

To be made the evening before Easter.

Salmon filets
brown sugar
lime juice
shredded coconut
1. Grease baking pan with cooking spray and heat oven to 375 degrees
2. Spread salmon filets on sheet.
3. Pour lime juice on salmon

1 TBSP baking powder

French Onion Round Steak

1/2 C (plus more)Lea & Perrins worcesterhire
butter
onion, sliced
1 Tbsp garlic
french onion soup mix 
2C water

Baked Potato Soup

Baked Potato Soup
4-6 large potatoes, peeled and cubed
6-8 C chicken broth (canned or leftover from boiling chicken)
1-2 C milk
salt and pepper
Opt- bacon, cheese, sour cream, chives, crackers, cornbread

1. Boil potatoes in broth until tender.
2. Mash with potato masher. Do not mash completely! Leave a few good chunks of potato.
3. Add milk, salt, pepper. Stir together.

Chocolate Chip Pumpkin Cookies

Easiest Pumpkin Bread/Muffins/Cookies Ever!

1 box spice cake mix

1. Mix ingredients together. Thats it!
2. Bake 375 degrees for 30 minutes(for a loaf- or when a knife poke comes out clean)/ 10-14 minutes for muffins or cookies.

I purchased a large bag (5 gallon bucket size) of sweet potatoes from a local farmer. Now, what to do with all of those potatoes!! The usual ~baked topped with butter, cinnamon and sugar, sweet potato casserole, and mashed sweet potatoes (seasoned with butter, cinnamon and sugar).

~1 soup bone (found at a butcher or use 4 beef bouillion cubes)
~2 cans diced tomatoes(you can use whole or fresh,diced)
~1 bunch of celery, all of it chopped, remove the end- keep the leaves.
~Pickling Spice
~water
~1 tsp salt 
~Dumplings, egg noodles, or rice
1. In a very large stock pot, fill with water and soup bone. Simmer 1 hour.

Homemade Bread Crumbs

1. Lay out bread that is stale or will be stale before it molds.
2. Lay on cookie sheets and bake in oven/ 350 degrees, 5-10 mins, until toasty.
3. Put in food processor or blender, blend until they are very tiny crumbs.
4. Put in tupperware container. You can add spices if you like seasoned bread crumbs. i always put Italian seasoning in    mine.
5. Put container in freezer to keep.

I want to share two summer time treats before summer ends. These recipes are the ones I remember when I was young. It may bring you back to the fun days of summer of your childhood!

Fudge Popsicles
3 Tbsp Flour
3 Tbsp cocoa
4 c Milk
popsicle mold

1. In a sauce pan, combine sugar, flour, and cocoa.

Tummy Yummy Tuesday July 28

I will be traveling tomorrow, Tuesday, so I will post this recipe early. And it's  good thing because this is a very tummy yummy recipe!!  It is frugal but not healthy. This is my very own recipe that I made on accident. When making a flour mixture for fried veggies, you mix flour and cornmeal. Easy Berry Buckle

Mix:
 1/4c butter, softened
3/4c sugar
2 eggs
1/2 c milk
1 tsp vanilla
Mix:
2 C flour
1 tsp baking powder
~ Then add to batter.
~ Fold in in 2 C berries/ Blueberries, blackberries, raspberries, strawberries
~ Pour batter into grease or foil lined loaf pan, or Muffin tin
Topping:
1/3 c sugar 
 1/2 c flour

1 1/2 tsp cinnamon
1/4 c butter, room temp
~Sprinkle over loaf or muffins
~Bake at 350 degrees for 20 mins.( check with knife) 
~ Cool 10 minutes before serving
