Honey Almond Cookies

Honey Almond Cookies( by Tosca Reno from The Eat Clean Diet)
1C Almonds
1 1/4 C unbleached whole wheat flour
1 C unbleached all purpose flour
1 tsp baking powder
1/2 tsp sea salt
2/3 C natural honey
1/4 C agave nectar
1/3 C coconut butter
1/4 C unsweetened applesauce
1/4 C ground flaxseed
1 egg
1 tsp vailla
1/4 C sliced almonds, for decoration(optional)

1. Ground almonds in food processor. Put in large bowl. Add flours, baking powder and salt. Mix well.
2. In a medium bowl, mix honey, agave nectar, coconut butter, applesauce, flaxseed, egg and vanilla. Use a mixer to mix well.
3.Combine all ingredients using using a spoon.
4. Cover with saran wrap and put in fridge for 1 hour. This will allow the dough to set.
5. When ready, preheat oven to 350 degrees.
6. Using a spoon or scooper, scoop out dough and shape into balls. Put on cookie sheet and press down to flatten.
7. Bake for 12-15 minutes.
8. Remove and let cool.
9. Garnish with toasted sliced almonds

Mix almonds, flours, baking powder, and salt


Mix the rest in another bowl. Then add all ingredients together. Put in fridge for 1 hour.


Form into small balls. Press down. Bake 12-15 minutes. 


I did not garnish mine.


Store in air tight container. ENJOY!
