Tex-Mex Soup

You can use canned ingredients or use frozen or homemade canned from your garden. As you can see in my diverse selection, I do not favor just one store or brand. I treat all of them equal~



I have the Pampered Chef professional pan. It's very large. And it's also my most favorite pan, ever! There may be a better one out there. But I don't own that one, yet. So, until then...... I sautee'd the onion on one side while I browned the ground turkey on the other.




 Then added all the canned ingredients, or garden fresh produce, if you are fancy like that. Then add water until it's "Soupy". Sorry, I don't measure much! 2-4 cups, I think.
 
 

Then add about a cup or so of your favorite salsa. Then after this, I forgot to take an "after" picture because I was so busy trying to get the boys to sit down to eat. They were starving! And if you have ever seen those in the wild- wild, hungry boys- then you know it can be dangerous! So there is another pic of the veggies abpve....Enjoy!! 







 


 

Tex- Mex Soup

1 lb ground beef or turkey
1/2 onion , chopped 
2 cans black beans, rinsed and drained
2 cans mexi-corn, or 1 whole kernel & 1 mexi-corn

1 can diced tomatoes
1 can rotel tomatoes*
1 can kidney beans
chili powder
cumin
water
1 c salsa
(* My dad does not like spicy-anything! Mom, DO NOT add rotel tomatoes! Just add another can of diced)

 1. Sautee onions and cook ground beef/turkey.(*Drain any fat)

2. Sprinkle with chili powder and cumin, enough to coat beef.(the amount is really for your own desired taste)
3. Add all canned ingredients to large stockpot, then add beef.
4. Simmer for 1 hour, or cook on low all day in a crockpot. 

* Serve with shredded cheese, tortilla chips, or cornbread
**This is a double batch. It served the 7 of us, and we have enough left for another meal. Freeze for a later meal.**
